You HAVE To Try This Recipe.. January 25, 2008 |
| Yesterday my girlfriend was over and I decided to make some chicken for the both of us for lunch.
I didn't make this recipe out of a cookbook or anything like that. I was simply looking around the kitchen for stuff to use and the idea popped into my head. But it turned out quite yummy :) Here's what to do: Get about a pound of boneless chicken and take the skin and the big white tendon out. In another pan, crack 2 eggs. In another pan, put in a mixture of coconut shreddings (you can find them at any supermarket), crushed walnuts, and progresso bread crumbs. Dip the chicken in the eggs, then the pan with everything else, and fry them! By the way, I used a skillet with non-stick spray (olive oil flavored) - instead of butter. I did this kind of off the top of my head, but it turned out amazing. I'm sure I'll be tweaking this recipe in the next few weeks. Enjoy! Jeremy |
