High Fiber Cannellonis

A very tasty recipe, easy to do and much healthier that the traditional recipe.

Serves approximately 10.

Mince 400g of grilled chicken breast (when I don't have left-overs I just take chicken or turkey ham), 200g of mushrooms (either canned or fresh, of any kind you like the most), 300g of tomato (canned or fresh, but peeled, please!

You can use concentrated tomato pulp, but it won't be as tasty).

Add 200g of boiled corn and 200g of boiled spinach leaves.

Mix everything together in a bowl. Add oregano, parsley and/or coriander, whatever you like the most.

Fill as many pasta tubes as you need/want/can fill (never less than 3 tubes per person) - the easiest way is using just your hands.

Get a tray that you can place in the oven (200ºC) and grease it with a thin layer of olive oil or butter.

Make your favourite bechamel sauce, but if you use butter, then use skimmed milk. Don't forget the nutmeg...!

Add 200g of low-fat scraped mozzarella cheese. (I usually need 1 liter of sauce for every 20 tubes).

Pour a bit of sauce into the tray. Place the tubes on the tray, keeping them a few milimeters apart.

Carefully (if you don't want them to stick together) pour the rest of the sauce over them. Put the tray in the oven for 30 minutes.

Serve with fresh salad and red wine.

You can substitute any ingredient of the filling by: boiled broccoli, brussel sprouts, pimento (sorry, I don't know the translation for that...), asparagus, cauliflower, raw minced carrot,...

PS-This recipe is as healthy as you want it to be - just choose your filing carefully. ;)
